How to fold burritos

Burritos are to northern Mexico what pasties are to Cornwall. Traditionally, farm labourers would take out bundles of beans, rice and whatever else was in the kitchen, all wrapped up in flour tortillas to keep them going all day. You can fill burritos with practically any of the recipes in this book (see the list of fillings on here for inspiration). Hunt for the thinnest flour tortillas you can find – they make the best burritos.

Step 1. Heat the tortilla in a hot, dry frying pan for about 10 seconds a side to make it soft and pliable.
